Bo1 is easiest for training in general (co-op and solo) because of the engine and zombie system. Throughout all maps it also has more effective wonderweapons than just the wunderwaffe found in some of the waw maps. Bo1 is harder (on solo) for high rounds because you have to kill more than 24 per round.

As far as EEs go, ima say GK takes the cake for me, I think origins is top 5 hardest for sure, but there’s harder maps. It all depends tho too, ZNS is easy solo, but tough on a squad if somebody gets screwed with their ritual challenges, whereas origins is tough to solo because of the insane amount of running you have to do, so having a team on origins makes the EE a lot easier of the work ...
